Thai Cucumber & Carrot Ribbon Salad

  • 1 cucumber
  • 1 large carrot
  • Some coriander
  • Rice Vinegar (or you could use lemon/lime)
  • Honey
  • Soy sauce
  • Sesame oil
  • Chilli flakes (optional)
  • Sesame seeds & peanuts

 

  1. Get to work with your peeler. Thick ribbons are best!
  2. In a small bowl, combine the rice vinegar, soy sauce, honey, sesame oil & chilli. Whisk to combine.
  3. In a large bowl, add every single other ingredient. Drizzle over your dressing and mix well!
  4. Let sit for 20 mins to marinate, and then serve!
