Roast Yam & Chickpea Salad

Roast Yam & Chickpea Salad

  • Big handful of yams (sliced into arge chunks)
  • 2 onion, red or brown (peeled & quartered)
  • 1 can chickpeas, drained and rinsed
  • A good glug of oil
  • Leafy greens, we recommend spinach
  • Juice from 1 orange
  • Spices of your choice! (What about 'cumin & paprika'? or 'oreganocayenne, cumin, chili powder'?

 

  1. Preheat oven to 200°C
  2. Place yams, onions, chickpeas & spices in a large roasting dish
  3. Add oil and mix until everything is nicely coated
  4. Roast in oven for approximately 30 minutes or until beginning to brown and a fork can be easily popped into the yams
  5. Remove from oven and while still hot mix through the chopped greens and orange juice
  6. Serve warm (or you can serve it cold as a side salad!)
