
Smashed Radish Salad
Crisp, peppery radishes meet a sweet-garlicky dressing in this bold little salad that’s equal parts crunchy and refreshing. Smashing the radishes helps them soak up all that zingy flavour, while a quick chill in the fridge mellows everything out just enough. It's ridiculously simple, wildly tasty, and perfect as a side for grilled meats, a picnic plate, or piled on toast with a bit of feta.
Ingredients
- 250 g radishes
- 1 cloves garlic, minced
- A handful of finely chopped fresh herbs (coriander, parsley, chives)
- A splash of soy sauce
- A splash of sesame oil
- 1 tbsp sesame seeds
- 1 tbsp spring onion, chopped
- Juice of a lemon wedge
- 1/2 crispy chilli (optional)
Method

Smash & Prep: wash your radishes and place them on a chopping board. Gently smash them using a rolling pin. You want them cracked but still holding shape.

Make the Dressing: In a jar or bowl, combine the soy sauce, sesame oil, garlic, herbs, spring onion, lemon juice, sesame seeds and crispy chilli. Screw the lid on and give it a good shake until everything is well mixed (or if you're using a bowl, give it a good whisk!)

Marinate: Add the smashed radishes to the jar or bowl and stir to coat.

Chill: Cover and refrigerate for at least 30 minutes to let the flavours mingle.

Serve: Bring to the table straight from the fridge - great as a zingy side dish or spooned over toast with feta.
