Radish on Buttered Toast
This is a snack that feels a little bit posh but takes barely five minutes. Think crunchy radish, lashings of salted butter, and warm crusty bread: the kind of thing you eat standing up in the kitchen because you “just need a quick bite” and then end up making another slice immediately.
Ingredients
- 4–5 fresh radishes, thinly sliced
- 2 slices crusty white bread (baguette or ciabatta are perfect)
- 2–3 tbsp butter (softened, and don’t be shy)
- Flaky sea salt, to finish
- Optional: a sprinkle of chopped chives or parsley, or a crack of black pepper
Method
-
Toast the Bread: Lightly toast your slices of bread until golden and warm, but still soft in the middle. You want a bit of crunch, not a roof-of-your-mouth hazard.
-
Butter Liberally: While the toast is still warm, slather on the salted butter — and I mean slather. This is the foundation of the whole thing.
-
Add the Radishes: Lay the radish slices over the butter in a neat little overlap. You want full coverage.
-
Salt It Up: Finish with a pinch of flaky sea salt (even if your butter’s salted — trust the process). Add herbs or pepper if you fancy.
-
Eat Immediately: Best enjoyed right away while the toast is still warm and the butter is all melty underneath the cool crunch of the radish.
Hot tip: This also works brilliantly as a canapé: slice a baguette thinly, toast lightly, and assemble as above. Watch them disappear at your next drinks night.
