  • 1 medium purple sweet potato (kumara)
  • 1 cup milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Prepare the Kumara:
