Easy & Zingy: Fennel, Apple & Chilli Salad

Elevate your meals with this vibrant and refreshing Fennel, Apple, and Chilli Salad. Perfectly balancing sweet and spicy flavours, this salad is an absolute delight whether served alongside roasted pork, fish, or enjoyed on its own. Fresh ingredients come together in a symphony of tastes and textures, making it an ideal dish for any occasion.

Ingredients

  • 1 fennel bulb, very thinly sliced (if your fennel has long tops, don't use this part. It can be a little tough when eaten raw. Save the tops for roasting!)
  • 1 apple, very thinly sliced
  • 1/2 red onion, thinly sliced
  • Zest and juice of 2 lemons
  • 1 chilli, thinly sliced (or 1/2 tsp dried chilli flakes)
  • Small handful of coriander, finely chopped
  • Salt and pepper to taste
  • 3 tbsp extra-virgin olive oil

Instructions

  1. In a large bowl, combine the fennel bulb, apple, red onion, lemon zest and juice, chilli, and coriander.
  2. Season the salad with salt and pepper.
  3. Drizzle the extra-virgin olive oil over the mixture and toss to coat evenly.
