Baked capsicum halves filled with creamy feta and spinach mixture, topped with fresh herbs and lightly golden from the oven.

Feta & Spinach Stuffed Capsicums

Creamy, herby, and loaded with flavour. These baked capsicums are stuffed with a rich mix of feta, cream cheese, and spinach — a quick, no-fuss dish that looks impressive but takes almost no time at all.

Ingredients

- 4 capsicums (any colour you like)
- 200g cream cheese
- 180g feta cheese
- 50g spinach
- Olive oil
- Salt & pepper
- Chives or dill, to finish

Method

1- Prep the capsicums – Wash, slice them lengthwise, and remove seeds and white membranes.

2- Make the filling – In a bowl, mix cream cheese, crumbled feta, chopped spinach, a drizzle of olive oil, and a little salt and pepper.

3- Stuff & bake – Fill each capsicum half with the mixture, drizzle with olive oil, and bake at 190°C for 30 -35 minutes, until soft and slightly golden.

4- Finish – Sprinkle with chopped chives or a few sprigs of dill.
