Crispy Eggplant Snack Bites
Got an eggplant and not sure what to do with it? These crispy eggplant snack bites are golden on the outside, creamy in the middle, and finished with a crunchy walnut coating. Simple, seasonal, and very easy to eat.
Ingredients
Eggplant
- 1 large eggplant
- Flour, for coating
- Oil, for shallow frying
- Salt & pepper
Creamy filling
- ½ cup sour cream
- ½ cup cream cheese
- 1 garlic clove, grated
- Zest of 1 lemon
- Handful of any fresh herbs (chives, dill, coriander, or parsley)
- Salt to taste
To finish
- Handful of walnuts, very finely chopped
- Extra chopped herbs
Method
1. Slice & fry
Slice the eggplant into rounds about 0.5cm thick.
Season lightly with salt and pepper.
Lightly coat each slice in flour, shaking off the excess.
Heat oil in a pan over medium heat and shallow fry until golden and cooked through on both sides.
Transfer to paper towel to drain and cool slightly.
2. Make the filling
In a bowl, mix sour cream, cream cheese, garlic, lemon zest, herbs, and salt until smooth.
3. Assemble
Spread a generous layer of the cream mixture onto one side of each eggplant slice.
Gently fold the slice over so it closes around the filling.
4. Coat & serve
Mix finely chopped walnuts with extra herbs.
Roll or press the creamy edge of each sandwich into the walnut mixture so it sticks.
Serve with a simple side salad or eat as-is.
