Broccoli Base Quiche
Not your average quiche. No pastry, no fuss, just broccoli doing something wildly impressive. Crispy edges, cheesy top, and a sneaky way to use up those greens sitting in the fridge pretending they’ve got plans.
Ingredients
- 1 broccoli, cut into florets
- 1 tbsp olive oil
- Salt & pepper
- 1 red pepper, chopped
- Sweetcorn
- Spinach
- 6 eggs
- Mozzarella cheese, grated
- Optional: paprika or any seasoning you fancy
Method
1. Preheat & prep
Preheat your oven to 180°C.
Boil the broccoli until fork tender, then drain well.
2. Build the base
Lightly grease a baking dish.
Add the broccoli and gently smash it with the back of a mug or cup until it covers the base evenly.
3. Add the goods
Drizzle with olive oil and season with salt, pepper, and paprika if using.
Scatter over the chopped red pepper, spinach and sweetcorn.
4. Egg + cheese situation
Whisk the eggs and pour them over the top. Spread them out evenly.
Finish with a generous layer of mozzarella.
5. Bake
Bake for 20–25 minutes, or until set and golden on top.
6. Slice & serve
Let it cool slightly, slice it up, and serve.
