Banana Coconut Cookies - 3 ingredient goodness

No flour. No sugar. No dairy. No fuss.

Soft, slightly crisp on the edges, and just the right amount of sweet. A simple way to give tired bananas a second life.

Ingredients

- 2 ripe bananas
- 250g desiccated coconut
- Dark chocolate (for topping) 

Method

1- Mash the bananas in a bowl until smooth.
2- Add the coconut and mix until well combined.
3- Shape the cookies – roll the mixture into small balls, place them on a lined baking tray, and gently flatten them. Press a small well in the centre of each cookie.
4- Bake at 180°C for 15–20 minutes, or until golden and holding together.
5- Melt the chocolate and spoon it into the wells.

Refrigerate until the chocolate has set.

  • These are ridiculously delicious and simple. We didn’t even add the chocolate and still good. We experimented with adding egg and maple and both options were good. Saving this one!
