½ cup mayonnaise (can substitute for plain greek yoghurt)
½ cup sour cream
3 gherkins, chopped in small cubes
1/4 red onion (finely diced)
3 spring onions, chopped finely
1 ½ teaspoons dijon mustard, or wholegrain mustard
2 hard boiled eggs, diced (optional)
Fresh herbs of your choice for garnish (we're fans of parsley, chives or dill!)
Salt & Pepper
Peel and cut potatoes into cubes, 4x4 cms approx.
Add potatoes to a large pot and cover with cold water.
Bring water to a boil, add salt and reduce to a simmer.
Cook until fork-tender then drain.
In a large bowl combine the potatoes, gherkins, red onion, spring onions. Then add mayonnaise, mustard, vinegar, sour cream, PLUS salt and pepper! Mix carefully, without making a mash. If adding boiled eggs now is the time.
Place on a serving dish, top up with fresh herbs and VOILA!
