The BEST Swede Gratin

The BEST Swede Gratin

  • 2 large or 3 small swede
  • 1 brown onion, thinly sliced
  • large sprig thyme, leaves picked off
  • 300ml thick cream
  • 3 tbsp fresh breadcrumb
  • 2 tbsp grated parmesan
  • Salt & Pepper
  1. Heat oven to 200C/180C fan/gas 6

  2. Peel the swedes, chop in half and thinly slice. In a large bowl, toss them with the onion, 2/3 of the cream, thyme and some salt & pepper. Pop the creamy swede mix into a baking dish (arrange them to be flat in the dish) cover with foil and pop into the oven.
  3. After 30 minutes, remove the dish from the oven, remove the foil and press the gratin down with a spatula. Drizzle with the rest of the cream. Scatter over the breadcrumbs and Parmesan, then bake for around 1 more hour, until golden and the swedes are tender.
  4. Serve & enjoy!
