Lemon Microwave Cake!

The quickest dessert you will ever make! Pop all the ingredients in a microwavable bowl and into the microwave. Voila! Easy peasy. Don't have any lemon curd on hand at home? Try out our recipe! It's super easy to follow and takes only 15 mins Lemon Curd Recipe
  • 100g caster sugar
  • 100g softened butter
  • 100g self-raising flour
  • 2 eggs
  • zest of 1 lemon
  • 1 tsp vanilla essence
  • 4 tbsp lemon curd
  1. Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof small dish. Microwave on high for 3 mins until risen and set all the way through. Leave to stand for 1 min.
  2. Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with some ice-cream, if you really want to spoilt yourself!

  • Omg, beautiful spongy and light. We had it with custard. Thanks to Susie, the previous post we omitted the vanilla and replaced with lemon juice.

    Perfect last minute birthday cake haha. Made the lemon curd too which was amazing.
    If making cake by itself, i would recommend swapping the vanilla with lemon juice, to make it more lemony 🍋 🙌🏽❤️ thanks!
