Watermelon Rind Fries

Watermelon season is here, and while we love the sweet, juicy fruit, it always feels like we’re throwing away half of it! But did you know the white part of the rind is totally edible? Instead of binning it, turn it into flavour-packed fries with this easy recipe. It’s a simple way to cut down on food waste and enjoy a surprisingly delicious snack.

Ingredients:

  • 2 cups watermelon rind, washed, green skin removed
  • 1 ½ tsp curry powder
  • 1 ½ tsp smoked paprika
  • 1 tsp peanut butter
  • Pinch of salt
  • 2 tsp olive oil

Method:

  1. Preheat your oven to 200°C (fan).
  2. Slice the watermelon rind into thin fry-like strips.
  3. In a bowl, mix the curry powder, smoked paprika, peanut butter, salt, and olive oil to form a paste.
  4. Toss the rind in the seasoning mix until well coated.
  5. Try them raw too, see what you think!
  6. Spread out on a lined baking tray and roast for 20–25 minutes, flipping halfway, until golden and slightly crispy.
  7. Serve hot and enjoy!

These fries are smoky, slightly sweet, and full of flavour. Try them with a yoghurt dip or a squeeze of lime for an extra zing!
