Thousand Layer Apple Cake

Somewhere between a cake and a stack of caramelised apple dreams, this layered beauty turns simple ingredients into something quietly magical. Think soft apples, a custardy crumb, a hint of cinnamon, and that golden top that makes you look like you’ve got your life together.

Ingredients

  • 6 apples, peeled, cored, and thinly sliced
  • 3 eggs
  • 30g butter, melted
  • 125ml milk
  • 80g flour
  • 1 tsp baking powder
  • 70g sugar
  • 1 tsp cinnamon
  • (Optional: a sprinkle of brown sugar for the top)

Method

  1. Set your oven to 180°C and line a loaf tin (or similar baking dish) with baking paper.
  2. Peel, core, and slice your apples as thin as you can. A mandolin works best, but watch those fingers.
  3. In one bowl, mix flour, baking powder, sugar, and cinnamon. In another, whisk eggs, milk, and melted butter. Gradually pour the wet mix into the dry, stirring until smooth. The batter should be thin, that’s the magic.
  4. Pour a little batter into the bottom of the dish, then start layering: apples → batter → apples → batter, until it’s all gone. Finish with a drizzle of the remaining batter and a sprinkle of brown sugar.
  5. Bake for about 1 hour, or until golden and set through. Your kitchen will smell like pure happiness.
  6. Let it cool slightly, then slice and serve with vanilla ice cream, cream, or mascarpone. Eat warm. Sigh dramatically.

  • I like to add the zest and juice of 1 orange to the peeled and cored apples. and after baking and cooling for 20 minutes cover with Apricot jam for delicious shine.
