The BEST Swede Gratin
- 2 large or 3 small swede
- 1 brown onion, thinly sliced
- large sprig thyme, leaves picked off
- 300ml thick cream
- 3 tbsp fresh breadcrumb
- 2 tbsp grated parmesan
- Salt & Pepper

Heat oven to 200C/180C fan/gas 6
- Peel the swedes, chop in half and thinly slice. In a large bowl, toss them with the onion, 2/3 of the cream, thyme and some salt & pepper. Pop the creamy swede mix into a baking dish (arrange them to be flat in the dish) cover with foil and pop into the oven.
- After 30 minutes, remove the dish from the oven, remove the foil and press the gratin down with a spatula. Drizzle with the rest of the cream. Scatter over the breadcrumbs and Parmesan, then bake for around 1 more hour, until golden and the swedes are tender.
- Serve & enjoy!

I put a layer of parsnips in this and it was amazing, family totally demolished it!
