Ingredients

  • 2 sheet puff pastry
  • 4-5 cabbage slices
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 250g feta cheese
  • A handful of mixed nuts or seeds (almond, walnuts, pumpkin seeds)
  • Fresh dill
  • Lemon zest
  • Salt & Pepper

 

Instructions

  1. Prepare the base: Preheat your oven to 180°C (fan-bake) and line a baking tray with parchment paper. Drizzle over the tray, the balsamic vinegar, honey, olive oil, salt, and pepper. Mix well with a spoon.
  2. Arrange the cabbage: Slice the red cabbage into discs (about 1-2 cm thick) and arrange them on the tray, making sure to cover it in a pretty, overlapping pattern. Don’t be afraid to get creative—this will be the top of your Tarte Tatin when you flip it over! Add a little extra salt to taste.
  3. Add the pastry: Lay the puff pastry over the cabbage, making sure it completely covers the cabbage and edges of the tray. Tuck in the sides so the pastry doesn’t shrink during baking.
  4. Bake: Place the tray in the oven and bake for 30 minutes or until the top is golden brown and crispy.
  5. Turn it out: Once the Tarte Tatin is baked, remove it from the oven and carefully flip it onto a large serving plate or chopping board. Be sure to do this while it's still warm!
  6. Whip the feta: While the tart cools slightly, add the feta to a food processor and blitz until smooth. Alternatively, you can whisk it by hand—just make sure to put some elbow grease into it for a creamy texture!
  7. Assemble: Spoon blobs of the whipped feta over the top of the Tarte Tatin, then sprinkle with fresh dill, crunchy mixed nuts, and a touch of lemon zest for that extra zing.
