Ingredients
- 2 sheet puff pastry
- 4-5 cabbage slices
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 3 tbsp honey
- 250g feta cheese
- A handful of mixed nuts or seeds (almond, walnuts, pumpkin seeds)
- Fresh dill
- Lemon zest
- Salt & Pepper
Instructions
- Prepare the base: Preheat your oven to 180°C (fan-bake) and line a baking tray with parchment paper. Drizzle over the tray, the balsamic vinegar, honey, olive oil, salt, and pepper. Mix well with a spoon.
- Arrange the cabbage: Slice the red cabbage into discs (about 1-2 cm thick) and arrange them on the tray, making sure to cover it in a pretty, overlapping pattern. Don’t be afraid to get creative—this will be the top of your Tarte Tatin when you flip it over! Add a little extra salt to taste.
- Add the pastry: Lay the puff pastry over the cabbage, making sure it completely covers the cabbage and edges of the tray. Tuck in the sides so the pastry doesn’t shrink during baking.
- Bake: Place the tray in the oven and bake for 30 minutes or until the top is golden brown and crispy.
- Turn it out: Once the Tarte Tatin is baked, remove it from the oven and carefully flip it onto a large serving plate or chopping board. Be sure to do this while it's still warm!
- Whip the feta: While the tart cools slightly, add the feta to a food processor and blitz until smooth. Alternatively, you can whisk it by hand—just make sure to put some elbow grease into it for a creamy texture!
