Kumara Gnocchi Stuffed with Cheese
This one’s for when you want to impress without really trying. The kumara makes the dough beautifully soft, and the melted mozzarella in the middle? Let’s just say nobody’s leaving the table early.
Ingredients
- 2 large orange kumara
- 1 egg
- 1½ cups flour (plus a bit extra for dusting)
- Mozzarella cheese
- Olive oil, salt, and pepper
Method
1- Roast the kumara – Peel and cut into chunks, drizzle with oil and salt, and roast at 180°C for about 1 hour or until tender.
2- Mash it up – Let them cool slightly, then mash until smooth. Add the egg and a pinch of salt, mix well.
3- Add the flour – Stir in the flour until a dough forms, then knead for about 5 minutes, adding extra flour if it’s too sticky.
4- Stuff and roll – Take a tablespoon of dough, flatten it in your palm, place a small piece of mozzarella in the centre, and wrap the dough around it. Roll between your hands to seal.
5- Boil – Bring salted water to a boil. Drop in the gnocchi and cook for 3–5 minutes, until they float. If any cheese starts to escape, they’re ready.
6- Make the sauce – While they’re cooking, make a quick sauce with anything you have in your fridge, mushrooms, cherry tomatoes, butter, add some garlic and greens, go crazy.
7- Toss it all together – Drain the gnocchi and toss them straight into the pan with the sauce. Cook for another few minutes to coat everything nicely.
8- Serve - Top with extra cheese if you’re that kind of person (no judgement here).
