
Fluffy Apple Sponge (2-Ingredient Magic)
No flour. No sugar. No dairy. No eggs. Just apples and a pinch of food sorcery. This naturally sweet, airy sponge is basically what would happen if a mousse and a marshmallow had a wholesome apple baby.
Ingredients:
- 4 apples (any variety, but sweet ones work best)
- 20g powdered gelatin
Method:
1. Peel, core, and chop
Prep your apples and chuck them into a blender or food processor with a tiny splash of water. Blitz into a smooth purée.
2. Heat things up
Pour the purée into a saucepan and gently warm over medium heat. Once it's heated through, add the gelatin while stirring constantly. Keep stirring for a few minutes to let the gelatin dissolve and activate, no lumps allowed!
3. Whip it real good
Transfer the warm mixture to a stand mixer (or use a hand mixer if you’ve got the stamina of a champion). Whisk on high speed for 12–20 minutes, until it transforms into a light, fluffy, mousse-like mixture. Think soft peaks, meringue vibes.
4. Set it
Pour the fluffy mix into a lined or lightly greased mould or dish. Smooth the top and refrigerate for at least 4 hours (overnight is ideal if you’ve got the willpower).
5. Serve
Once set, remove from the mould and dust with cocoa powder if you’re feeling fancy. Slice, admire, and prepare for people to say “Wait… just apples and gelatin??”
