Easy Peasy Lemon Posset

This deliciously simple lemon cream dessert will definitely wow your dinner guests. Or how about make it on a casual Tuesday?! It's that easy that you can! It is important that you follow the boiling instructions carefully but trust us − the results are well worth it.
  • 300 ml cream
  • ¼ cup caster sugar
  • juice of 1 lemon
  • grated zest of 1 lemon

 

  1. Place the cream, sugar and lemon zest in a saucepan. Stir over a moderate heat and bring to the boil. Continue to gently boil for 3 minutes.
  2. Remove from the heat and stir in the lemon juice. Strain the mixture through a sieve into a jug, to remove the lemon zest (or if you're like us an are big fans of lemons, then you can leave the zest in!)
  3. Pour the lemon cream into individual serving dishes. Cool and refrigerate for 3-4 hours, or overnight until set.
  4. For garnish, you can zest some lemon skin or lime non top!
  5. Voila. Enjoy!
