Broccoli Bread
A loaf that’s green in all the right ways. This veggie-packed bread is perfect for toast, sandwiches, or smugly telling people you had broccoli for breakfast.
Ingredients

1 head of broccoli (stem included)

3 eggs

½ cup flour (you can swap for Gluten free flour)

1 Tbsp baking powder

Pinch of salt

Seeds for topping; pumpkin, chia, sunflower (or whatever you’ve got)
Method

Preheat your oven to 180°C. Line a loaf tin or baking mould with baking paper.

Roughly chop the broccoli (yes, stem too) and blitz in a blender or food processor until finely ground.

Add the eggs, flour, baking powder, and salt. Blend until smooth and combined.

Pour the mixture into your mould, smoothing the top. Sprinkle generously with seeds.

Bake for about 45 minutes, or until a skewer comes out clean.

Cool slightly before slicing. Serve warm with butter, avocado, or whatever spreads make you happy.
Tip: Keeps in the fridge for up to 3 days... if it lasts that long.
