Yacon, Blue Cheese & Walnut Salad

A tuber that looks at first glance a lot like a kumara or potato, the yacon is originally from Peru and is a close relation of the Jerusalem artichoke and sunflower. Peeled and eaten raw a yacon tastes like a very mild juicy apple or pear!

  • 1 large yacon, peeled and thinly sliced
  • Blue cheese
  • Walnuts (toasted), chopped or any nut of your choice
  • Lettuce, washed and dried
  • 1/2 red onion, finely sliced
  • Juice of 1/2 lemon
For the Dressing;
  • 1 tbsp. balsamic vinegar
  • 1/2 tsp Dijon mustard
  • Juice of 1/2 lemon
  • tsp honey
  • salt and pepper

 

  1. Peel and slice the yacon. Keep the slices in a bowl of water to which you’ve added the juice of some lemon (or lime!).
  2. Mix the salad dressing ingredients well (we like putting ingredients in an old jam jar, popping on the lid, and shaking)
  3. Place the lettuce leaves on a plate. Drain and dry the yacon slices and scatter them over the greens.
  4. Break up the blue cheese into small pieces and scatter over the yacon and greens.
  5. Drizzle with some of the dressing and then scatter over the chopped toasted nuts. Add extra S&P to your salad - it will really exentuate the flavour!
  6. Enjoy with fresh bread!
