Urenika Autumn Salad

A big shout out to Nicola from Slow Stream Farm for this delicious recipe. These guys are doing pretty epic things on their farm just outside Taupō, running a small-scale & sustainable beef farm. Focusing on regenerative farming, they are not only looking after the environment with their low impact practices, but are also increasing their animals welfare by implimenting a home-kill abbatoir.

Urenika Autumn Salad
  • Urenika Maori Potatoes
  • Green Beans (or any green veg of your choice)
  • Green Capsicum
  • An Ear of Corn
  • Red Onion
  • Apple Cider Vinegar
  • Fresh Mint (or any herb of your choice)

For the Mayo

  • Egg
  • Veggie Oil
  • Half a clove of garlic
  • Apple Cider Vinegar
  1. Scrub, boil and cool the potatoes (skin on).
  2. Chop raw green beans, fresh mint, green capsicum.
  3. Remove the kernels from a raw corn cob.
  4. Thinly slice red onion and marinate in a little apple cider vinegar while the potatoes cool.
  5. Make mayonnaise by blitzing an egg, oil, apple cider vinegar, salt and garlic. (Easier than a whisk!).
  6. Combine all the ingredients (take onion out of the vinegar) and mix through mayonnaise just before serving.
  7. Just the right amount of fresh, bright crunch and creaminess. ❤️

 

Fun Fact!

Ure is Maori word for "penis". "Nika" is a transliteration of an offensive english word beginning with N... The name of this potato is offensive. The potato is also known as "tutaekuri", which means "dog poo". Despite the terrible names, this is a quintessential Maori potato and the most recognisable taewa.
