Purple Kumara 'Crostini'

Now, we reckon we shuld leave the topping to your imagination, but you can literally use anythingyour heart desires! Here are a few ideas for you:

Sour cream, chives and smoked salmon.
Blue cheese and cranberries.
Smashed avo and tomatoes.
  1. Preheat the oven to 180 C. Line a baking sheet with parchment paper.
  2. Wash the kumara and cut the ends off and then cut them into ¼-inch-thick slices. Brush both sides of the kumara slices with olive oil and season with salt and pepper.
  3. Arrange the slices on the prepared baking sheet and roast until they are golden brown and crisp, 17 to 20 minutes. Let cool completely.
