Purple Kumara and Vanilla Marble Cake (eggless)

Super easy cake, fun to make with your kids, and cutting it it's the most fun part as you can see the marble effect inside!

Ingredients

2 cups of plain flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1 1/3 cup of sugar
1/2 cup oil
1 cup yoghurt (room temp)

1tsp vanilla essence
1/4 cup milk
1 big purple kumara (peeled and mashed)

Preheat oven at 180 C. Grease or line with baking paper a 22 cms round baking dish.

In one bowl add flour, baking powder, baking soda and salt. Mix.
In another bowl add sugar, oil and yoghurt and whisk thoroughly.

Now add your dry ingredients (1st bowl) to your wet ingredients (2nd bowl) plus the 1/4 cup of milk. Mix to form a batter.

Divide this batter in 2 bowls, half and half. One will be the vanilla and the other one the purple batter.
To the first batter add vanilla essence and to the 2nd batter add the purple mash. If they feel too thick add a bit more milk.

Finally, alternate scoop the batters into the baking dish, some vanilla then some purple, until they are all used up. Smoothe the top with a spatula or spoon. Bake for 35-45 minutes, or until a skewer or a knife inserted at the center of the cake comes out clean. The cake will have a crackly top. Let cool on a wire rack completely.

Dust with icing sugar and serve with a side of yoghurt if desire!
