The Classic! Our Easy and Delicious Potato Salad

  • 1 Kg Agria potatoes
  • ½ cup mayonnaise (can substitute for plain greek yoghurt)
  • ½ cup sour cream
  • 3 gherkins, chopped in small cubes
  • 1/4 red onion (finely diced)
  • 3 spring onions, chopped finely
  • 1 ½ teaspoons dijon mustard, or wholegrain mustard
  • 2 hard boiled eggs, diced (optional)
  • Fresh herbs of your choice for garnish (we're fans of parsley, chives or dill!)
  • Salt & Pepper
  1. Peel and cut potatoes into cubes, 4x4 cms approx.
  2. Add potatoes to a large pot and cover with cold water.
  3. Bring water to a boil, add salt and reduce to a simmer.
  4. Cook until fork-tender then drain.
  5. In a large bowl combine the potatoes, gherkins, red onion, spring onions. Then add mayonnaise, mustard, vinegar, sour cream, PLUS salt and pepper! Mix carefully, without making a mash. If adding boiled eggs now is the time.
  6. Place on a serving dish, top up with fresh herbs and VOILA!
