Purple Kumara 'Crostini'

  1. Preheat the oven to 180 C. Line a baking sheet with parchment paper.
  2. Make the Kumara Crostini Base: Wash the kumara and cut the ends off and then cut them into ¼-inch-thick slices. Brush both sides of the kumara slices with olive oil and season with salt and pepper.
  3. Arrange the slices on the prepared baking sheet and roast until they are golden brown and crisp, 17 to 20 minutes. Let cool completely.

Now I would like to leave the topping to your imagination. You can literally use anything on top.
A few combination ideas here:

Sour cream, chives and smoked salmon.
Blue cheese and cranberries.
Smashed avo and tomatoes.
