Salad and Assembly
1 fennel bulb, cored and very thinly sliced
1 apple, very thinly sliced
1/2 red onion, thinly slices
Zest and juice of 2 lemons
1 chilli, thinly sliced (can also use 1/2 tsp dried chilli flakes)
Small handful of cilantro, finely chopped
Salt and pepper to taste
3 Tbsp. extra-virgin olive oil
Toss fennel bulb, apple, lemon zest and juice, chilli, and cilantro in a large bowl; season salad with salt. Drizzle oil over and toss to coat.
This salad goes really well with roasted pork, fish, or simply by itself!
