Grilled Courgette topped with Herbs and Feta

3 courgettes
1/2 small red onion, finely chopped
1/4 cup fresh mint
1/4 cup fresh oregano
1 tablespoon olive oil
Salt and pepper, to season
1/2 feta cheese, crumbed

  1. Preheat your BBQ on medium-high.
  2. Slice the courgette diagonally 1-2 cms thick. Coat with oil. Cook the courgette for 1 minute each side or until tender and lightly charred.
  3. Transfer to a serving platter. Top with red onion, finely chopped herbs and feta cheese.
  4. Season with salt and pepper. Voila!!

TIP: You can substitute fresh herbs for dried if desired, and add toasted seeds for crunchiness.
